Ingredients

  • 1 cup onion, chopped
  • 1 chicken breast, diced
  • 4 garlic cloves, peeled
  • 2 cups chicken broth
  • 1 can white beans, cooked, drained and rinsed
  • 1 can chopped tomatoes
  • 1 tablespoon Italian seasoning
  • 3 cups kale, chopped (fresh or frozen)
  • 1 tablespoon butter

Directions

    Sautee the onion and garlic with the butter in a saucepan over medium-high heat. Add the chopped chicken. Add the chicken broth, white beans and tomatoes. Mix the ingredients.

    Let it boil for about 10 minutes. Add the kale and Italian seasoning.

    Cook over low heat until the kale is soft, for 3 to 5 minutes. Serve hot.
