Turkey Burgers with Red Pepper and Eggplant Sauce

Ingredients

  • 3 lbs ground turkey meat
  • 8 whole-wheat hamburger buns
  • 7 tablespoons extra virgin olive oil
  • 3 minced garlic cloves or garlic paste
  • 1 red onion, finely chopped
  • 2 cups spinach, finely chopped
  • 3 tablespoons black olives, finely chopped
  • 2 cups sliced mushrooms
  • 1 tablespoon fresh parsley, finely chopped
  • 8 slices cheese (your choice)
  • 2 red bell peppers
  • 1 medium eggplant
  • 1/2 teaspoon hot pepper
  • 1 teaspoon sugar
  • 1/8 teaspoon cumin
  • Salt and pepper to taste

Directions

    To start, keep the meat refrigerated while you prepare the ingredients.

    Place a tablespoon of extra virgin olive oil in a skillet over medium heat. Sauté the onion and 1 minced garlic clove until translucent. Once they’re ready, turn off the heat, put them in a bowl and let them cool.

    Once the garlic and onion mixture has cooled, stir in black olives, spinach, salt, cumin and pepper (to taste). Blend well. Add this mixture to the meat and combine to season.

    Coat your hands with a little oil and prepare the hamburgers. In skillet, roast the meat, five minutes on both sides over medium heat. When meat starts to deepen in color, add cheese and cover the cheese with a second piece of meat until it melts.

    Preparation for the sauces: Garlic MushroomsSauté 1 minced garlic clove and mushrooms in skillet with 3 tablespoons of olive oil. Cook until soft. Once it’s ready, sprinkle with fresh parsley and salt to taste.

    Red Pepper and Eggplant Sauce: Preheat the oven to 350° F.

    With fork, prick eggplant on all sides several times. Bake until golden brown and soft. When it’s ready, peel, cut in half to remove seeds and then cut into medium-size pieces.

    Roast pepper on the stove top or grill until it turns black. Then remove the burnt skin and seeds. Cut into strips and place in the food processor or blender with the eggplant, 3 tablespoons of oil, 1 garlic, 1/2 teaspoon of hot pepper, 1/2 tablespoon of sugar and 1/8 tablespoon of salt.

    Put the hamburgers together by placing the meat over the bun, then a generous coat of pepper and eggplant sauce and, lastly, the garlic mushrooms.

    You can prepare the meat the day before and keep it in refrigerator.

    You can also make the red pepper and eggplant sauce days in advance and keep those in the refrigerator. This delicious sauce is a substitute for mayonnaise, mustard and ketchup.
