Shrimp Cocktail in Avocado Halves with Tuna and Mango Salad

Nothing’s more delicious and refreshing than shrimp cocktail. And if you add a creamy avocado flavor and a tuna and mango salad with lime, orange and cilantro vinaigrette, you will be able to please everyone with a magnificent dish on a summer afternoon spent outdoors!

Ingredients

  • 1 lb medium shrimp
  • 3 large avocados
  • 1 tablespoon yellow lemon juice (lime)
  • 1 can (12 oz) tuna in water
  • 2 diced tomatoes
  • 4 tablespoons green pepper
  • 4 tablespoons red pepper
  • 6 tablespoons red onion, finely chopped
  • 6 tablespoons chopped cilantro, plus a sprig for garnish
  • 1 teaspoon honey
  • 1/4 cup fresh orange juice
  • 1 tablespoon apple cider vinegar
  • Olive oil to taste
  • 1/8 teaspoon yellow lemon zest, grated
  • Salt and pepper to taste
  • 1 large mango, ripe, but firm (cut into medium cubes)
  • Lettuce and scallions for garnish

Directions

    Boil water in a medium pot. Add the washed shrimp, cover the pot and leave it in there for 2 minutes. Remove the pot from the heat, let rest for 5 minutes, take out and drain.

    Cut the avocados in half without breaking the skin; remove the pit and sprinkle with a few lemon juice drops.

    Open the can of tuna and drain all the water.
  • 4
    Once the tomatoes, peppers, onion and cilantro have been chopped, combine with the previously drained tuna.

    Place all the liquids in a bowl: the honey, orange juice, lime juice, apple cider vinegar, olive oil and, lastly, add the grated yellow lemon zest. Stir.

    Add the vinaigrette to the tuna, and salt and pepper to taste.

    Fill the avocado halves with the tuna salad and top with the chunks of mango and a cilantro sprig.

    Arrange the shrimp along the edge of the avocado in a decorative manner.

    Serve the avocado immediately over a bed of a variety of lettuce. You can also add some scallion sprigs.

    You can grill large shrimp or prawns, instead of boiling it.

    You may substitute pineapple for the mango, if you wish.
  • tip 3
    And if you want to add a spicy touch to it, you can sprinkle with chili powder or top with sliced jalapeño to taste.
