We all have times when the family budget is tighter than usual. During these times, one of my favorite ingredients is canned tuna. It's not only economical, but also very versatile. With just four ingredients you can prepare a delicious dish like this tuna ceviche.

Ingredients

  • 4 cans of tuna, strained
  • 3 Roma tomatoes, chopped
  • 1/2 white or red onion, chopped
  • 2 to 4 serrano peppers, seedless and finely chopped
  • 8 to 10 lemons
  • Toast or saltines
  • Avocado (optional)

Directions

  • 1
    Mix the tuna, tomatoes, onions and peppers in a large bowl.
  • 2
    Sprinkle with the juice of 8 to 10 lemons and season with salt and pepper to taste.

    Refrigerate for at least 30 minutes before serving so the flavors mix.

    Serve with toast or saltines and garnish with avocado.
