Ingredients

Hass avocados

limes
Baby lettuce or butter lettuce, washed
1/2
cup of chopped fresh tomato
1/2
cup of finely chopped red onion

cucumber, sliced
1
cup medium size shrimp, cooked and deveined
Olive oil
Sea salt, if desired
Pepper, if desired
Parsley leaves, for garnishing

    On a plate place a bed of lettuce; halved the avocadoes, peel and place a half on top of lettuce.

    In small bowl place shrimp and stir in juice of one lime, olive oil, salt and pepper, add the tomato, and onion; incorporate.

    Spoon shrimp salad inside avocado and decorate with cucumber slices and a parsley leaves.
  • 4
    Drizzle olive oil and juice of the second lime, salt and pepper, as desired.
