Ingredients

  • 4 Hass avocados
  • 4 limes
  • Baby lettuce or butter lettuce, washed
  • 1/2 cup of chopped fresh tomato
  • 1/2 cup of finely chopped red onion
  • 1 cucumber, sliced
  • 1 cup medium size shrimp, cooked and deveined
  • Olive oil
  • Sea salt, if desired
  • Pepper, if desired
  • Parsley leaves, for garnishing

Directions

    On a plate place a bed of lettuce; halved the avocadoes, peel and place a half on top of lettuce.

    In small bowl place shrimp and stir in juice of one lime, olive oil, salt and pepper, add the tomato, and onion; incorporate.

    Spoon shrimp salad inside avocado and decorate with cucumber slices and a parsley leaves.

    Drizzle olive oil and juice of the second lime, salt and pepper, as desired.
