Thanks to the help of Bisquick™ Original baking mix, these pancakes can easily be whipped up in no time. We're sprucing up the mix by adding chia seeds that are a great source of fiber, and topping them with sweet chopped kiwi.

Ingredients

  • 3 kiwis, peeled and chopped
  • 1 tablespoon agave (sugar or honey optional)
  • 1 cup milk
  • 1 tablespoon chia seeds
  • 2 cups Bisquick™ Original baking mix
  • 2 eggs
  • Butter, to taste
  • Maple syrup, to taste

Directions

    Combine chopped kiwi and agave, sugar or honey. Place in fridge until ready to serve.

    In a large bowl stir together milk and chia seeds; allow to sit for 5 minutes. Add remaining ingredients and stir until blended.

    Pour by 1/4 cup onto hot greased griddle. Cook until edges bubble, flip and cook additional 2 minutes.

    Place on baking sheet and place in a warm oven until all pancakes are cooked.

    Serve chia pancakes with butter, maple syrup and topped with kiwi.
