Adding whole grain foods to your diet can be a good way to swap in added benefits, and what better way to start than with whole grain pancakes! Sunday morning pancakes are a tradition in our home, but whole grain flour wasn’t always in the recipe. I finally sat down and figured out how to add whole grain pancakes to our weekend rituals with this delicious whole grain blueberry and banana pancakes recipe.

Ingredients

  • 1 1/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 tablespoon sugar
  • 1 egg
  • 1 1/4 cup milk
  • 1 banana, mashed
  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons butter

Directions

    Begin by mixing all dry ingredients together until well incorporated. Set aside. Whisk egg and milk together. Pour slowly into dry ingredients and mix until you’ve created a smooth, batter consistency.

    Add mashed banana and blueberry and stir until incorporated.

    Melt butter in a heavy-bottom frying pan over medium heat. Pour approximately 1/4 cup of the batter into the pan. Let cook slowly and turn once the bottom has become golden brown. Cook the other side using the same method. Serve and enjoy!

  • Small pancakes cook up quicker and are fun to eat!
