Green beans with lemon and cumin vinaigrette is a simple alternative for a quick meal during the week, but it also makes a great dish for special occasions. Ingredients

  • 2 lbs of green beans, deveined and without the tips
  • 4 tablespoons of olive oil
  • 4 tablespoons of lemon juice
  • 1/2 teaspoon of cumin
  • 2 garlic cloves, mashed
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper

Directions

    Using a fork, beat the lemon juice with the oil, cumin and garlic.
  • 2
    Boil water in a large pot. Add the green beans and cook for 8 minutes or until they are tender. Remove and place on the tray.

    Sprinkle salt and pepper. Check that the quality is to your liking and add the vinaigrette and cilantro. Serve immediately.

    To get all the juice from the lemon, submerge it in hot water for 7 minutes before squeezing.
