There’s nothing better than eating a warm egg and potato croquette! They’re crunchy on the outside and soft on the inside, and you can enjoy this delicious snack at home by just following this simple recipe. It’s the perfect appetizer: it’s ideal for children after a long day at school or to serve if you have numerous guests. Ingredients

  • 4 peeled potatoes, diced
  • 2 cooked eggs
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Directions

    Cook the potato cubes in plenty of hot water with salt, and mash them once they’re ready.

    Cut the cooked eggs into relatively big pieces.

    Take some of the mashed potatoes and make a small ball the size of a golf ball.
  • 4
    Press the center of the ball and fill it with some of the cooked egg.
  • 5
    Close the ball and shape it into an oval, in a typical croquette shape.

    Roll each ball in flour, then cover them in the beaten egg and roll them with bread crumbs.

    Fry the croquettes in hot oil and place them on absorbent paper once they’re golden.

    Serve immediately.

    If you want to enjoy these snacks later, prepare a bunch of croquettes and put them in the freezer. You can heat them up later, seconds before serving.
