I love croquettes because they make such a versatile, not to mention tasty, appetizer. I make them two ways: sometimes with a white sauce and other times with potato. These ham croquettes are creamy inside and crispy outside. Plus, they’re budget-friendly and ideal for freezing so the next time company comes over unannounced, you’ll have something flavorful to cook up in a pinch! MORE + LESS -

4 1/2
lb mashed potatoes
8
ham slices, finely chopped
1/2
cup shredded mozzarella cheese
3
tablespoons butter, melted
1/4
cup milk
Salt & pepper, to taste
2
eggs, beaten
1/2
cup bread crumbs
Oil, for frying
