These delicious baked cauliflower croquettes with cheese are perfect for a movie night with the kids and their friends. Without even noticing the kids will be eating vegetables, since the cheese gives each bite a pleasant and savory flavor. Ideally, they should be baked and served with cocktail sauce or blue cheese sauce.

Ingredients

  • 2 cups of cauliflower
  • 1 cup of cheddar or mixed cheese
  • 1/4 cup of self-rising flour
  • 2 eggs
  • 1 teaspoon chives
  • 1 cup of Panko, 1/4 to sprinkle
  • Salt and pepper

Directions

    Remove the leaves, cut and wash the cauliflower. Steam in 1/2 cup of water or if you prefer 8 minutes in the microwave.

    Remove, drain and put into a medium-size bowl. Add cheese, flour, eggs, chives and the panko. Season to taste with salt and pepper.

    Shape the croquettes. Use a medium-sized scoop to get equal size croquettes.

    Place them on a tray with baking paper. Bake for 30 to 35 minutes at 400 °F.

    Serve with blue cheese sauce and marinara sauce.
