Arepas Stuffed with Turkey Salad, Avocado and Cheese

During the holidays, particularly during Thanksgiving and Christmas, many of us prepare the all-time classic turkey. I for one go by the motto “the larger, the better.” The one drawback about it is that we're a small crowd at home, so I'm usually stuck with a leftover turkey galore! But there are plenty of ways to reuse your leftovers to recreate delicious meals for your family and save time in the kitchen while you're at it. The most common ones include turkey sandwich or salad, among others. But as a true Venezuelan, I must make arepas! So I came up with this reina pepiada version where I use turkey instead of chicken. Be my guest… you will love it!

Ingredients

  • 3 cups turkey, cooked and shredded
  • 1/2 cup onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 large avocado, pit removed and roughly chopped
  • Salt and pepper, to taste
  • 6 corn arepas
  • 2 cups American cheese, grated

Directions

    In a large bowl, combine turkey, onion, mayo and avocado. Mix well to combine, taste for salt and pepper and add more to taste.

    Cut the arepas open with the help of a knife and stuff with turkey salad and grated cheese.

    Serve hot.
