Ingredients

package (4.7 oz) Betty Crocker™ country style Yukon Gold mashed potatoes
2 1/2
cups milk

eggs

cup waffle mix

teaspoon baking soda
1
teaspoon baking powder
1/4
teaspoon salt
1/4
teaspoon ground pepper
1
avocado, mashed
4
oz brie cheese, sliced
1
lb turkey breast, sliced
Cranberry sauce, to taste

    Preheat the oven to 400 °F.

    In a medium-sized container, combine the package of instant potatoes, 1 1/2 cups milk and eggs. Mix with a spatula.

    Add the waffle mix, baking soda, baking powder, salt and pepper, and 1/2 cup milk. Stir well.

    Preheat the waffle iron, pour 1/4 cup of the batter onto the griddle, distributing with a spatula if necessary. Close the waffle iron and cook until golden brown, for approximately 2-3 minutes each waffle. Repeat with remaining batter.

    Spread 1 tablespoon of mashed avocado over the top of 4 waffles, which will be used to create the bottom of this waffle sandwich. Layer with the cheese, turkey and cranberry sauce before closing the sandwich with a top waffle. (You can use a skewer or toothpick to keep the sandwich from falling apart) Bake for 5-10 minutes, until the cheese has melted.

    Remove from oven and serve immediately.

Expert Tips

  • Swap out turkey for chicken or any of your favorite cold cuts.
  • Substitute the avocado for mayonnaise or prepare your own spread, combining 1 tablespoon of mayonnaise with the avocado and smashing with a fork until creamy.
