Ingredientes

  • 1 1/3 cups water
  • 2/3 cup uncooked quick-cooking barley
  • 1 tablespoon butter
  • 1 large onion, chopped (1 cup)
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped fresh or 2 teaspoons dried thyme leaves
  • 1/2 teaspoon salt
  • 2 boxes (9 oz each) frozen corn, thawed and drained
  • 1 box (9 oz) frozen baby lima beans, thawed and drained

Instrucciones

    Heat water to boiling in a 1 1/2-quart saucepan. Stir in barley; reduce heat to low. Cover and simmer 10 to 12 minutes or until tender. Let stand covered 5 minutes.

    Melt butter in 10-inch skillet over medium-high heat. Cook onion and garlic in butter about 2 minutes, stirring occasionally, until onion is crisp-tender.

    Stir in barley and remaining ingredients. Cook about 5 minutes, stirring occasionally, until thoroughly heated.
