This turkey cranberry yogurt dip is simply delicious. If you’re like me and you like to mix sweet and salty flavors, this is the dip for you. It only takes a few minutes to make this tasty appetizer, and the best thing is that you can share it. This mouth-watering yogurt dip is also great with any leftover turkey after Thanksgiving Day. Your guests and family will truly be delighted!

Ingredients

  • Oil
  • 1 medium red onion, chopped
  • 2 garlic cloves, finely chopped
  • 3 tablespoons tomato paste
  • 1 tablespoon ground chili
  • Kosher salt to taste
  • 1/4 teaspoon cayenne pepper
  • 1 cup chicken broth
  • 2 cups shredded turkey or ground turkey meat
  • 1 cup sour cream
  • A handful of cranberries
  • 1 cup cilantro leaves, chopped
  • Juice of 1 lemon
  • 1 cup corn
  • 1 green pepper, chopped
  • 1 1/2 cup corn bread
  • 3 medium tomatoes, chopped
  • 1 (14 oz.) can black beans, rinsed and drained
  • 1 1/2 cup cheddar cheese, grated
  • Tortilla chips

Directions

    Heat up the oil in a large pan over medium-high heat. Add half the onion and garlic, and cook until golden brown. Add the tomato paste, ground chili, 1/2 teaspoon salt, and the cayenne pepper. Cook and stir for about 2 minutes until the mixture is a dark red.

    Add the chicken broth and boil it over low heat. Cook until it thickens a bit, for about 3 minutes. Add the turkey and stir. Let it cool down.

    In a small bowl, mix the sour cream, cilantro, lemon juice and lemon zest. In another bowl, mix the corn and green pepper.

    In a large baking dish layer the corn bread.

    Then, put a layer of tomatoes, a layer of beans, cheese, sour cream, cranberries, turkey, and the rest of the chopped onions.

    Lastly, add the corn and green pepper.

    Leave aside for a few minutes and serve with tortilla chips.
