I love parties. That’s why I’m always looking for an excuse to gather my family and friends. Whenever I want to prepare a fun, colorful and, above all, informal menu, I start by making a list of nibbles, snacks, appetizers and canapés or whatever you call them. Sweet, salty, spicy or creamy… they are all fascinating! It’s fashionable nowadays to throw snack parties or “Party Bites” where you present mini dishes and drinks so that your guests enjoy a variety of creations and flavors in an informal and relaxed way. My salmon and cucumber roll-ups are fun and refreshing. I have combined sophisticated ingredients that make them simply irresistible. Prepare them for your next party!

Ingredients

  • 1 medium size cucumber
  • 4 oz smoked salmon
  • 1/3 cup minced scallion (green and white parts)
  • 8 oz cream cheese
  • 1 tablespoon red onion, diced
  • 1 tablespoon baby capers
  • 1 medium size avocado, peeled and sliced in pieces of 1-inch wide
  • 12 fresh dill sprigs for garnish

Directions

    Wash the cucumber and leave the skin. Using a potato peeler, carefully cut 12 very thin slices. Discard the first slice, which should be just skin on one side.

    Cut the salmon into 12 equal slices and put them aside.
  • 3
    In a small deep bowl, mix scallions, cream cheese, red onion and baby capers until you get a creamy consistency.

    On a flat surface, preferably on a cutting board, extend the cucumber slices.

    Place the salmon slices on the cucumber slices. Spread a spoonful of the cream cheese mixture and put an avocado strip on one of the ends, ensuring that it sticks out on one side.

    Carefully roll it from one end, slightly pressuring to form a roll-up.

    Place them on a serving dish with the avocado facing up and garnish each roll-up with a fresh dill sprig. Serve immediately and enjoy!

Expert Tips

  • tip 1
    Take the cream cheese out of the fridge in advance, so it will be softer when mixing it.
  • tip 2
    Cut the avocado strips just before putting them in the roll-ups; otherwise, they will turn black very quickly.
  • tip 3
    You can replace the dill sprigs with fresh cilantro sprigs.
  • tip 4
    Serve the roll-ups fresh and just prepared.
