Soba Noodles with Pineapple Sesame Chicken

Soba noodles are a great alternative to the typical dinner because they are made out of buckwheat and are customarily enjoyed at room temperature. In this recipe, we gave it an added twist by serving it with sweet and savory chicken, and a green salad with tangy vinaigrette dressing. Since soba noodles cook fairly quickly, this hearty and flavorful dinner can be prepared under any time constraint. Want to add a little bit of spicy heat? Add a sliced jalapeño to the tangy vinaigrette. It adds a great balance to the sweetness of the pineapple and brown sugar. Enjoy!

Ingredients

  • 1 (8 oz) package soba noodles
  • 2 tablespoons sesame seeds
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons light brown sugar
  • 1 cup chopped pineapple
  • 1 lb skinless chicken strips
  • 1 tablespoon finely grated ginger
  • 1 jalapeño, sliced in thin rounds (optional)
  • 3 tablespoons rice vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 (7 oz) package baby arugula
  • 1/3 cup snow peas, chopped
  • 1/3 cup cherry tomatoes

Directions

    In a large pot, cook the soba noodles according to the package directions, and rinse under cold water.

    Toast sesame seeds by cooking in a skillet over medium heat. Stirring constantly until golden, approximately 3 minutes.

    In a large skillet over medium heat, heat soy sauce and brown sugar for 1 minute. Add pineapple pieces. Stirring frequently, add the chicken, and sauté for 10 minutes or until cooked through. Transfer to a bowl.

    Sprinkle the toasted sesame seeds over the chicken and pineapple mixture, and toss to coat.

    In a small bowl, whisk together the ginger, jalapeño slices, vinegar and oil.

    Divide the greens, snow peas and cherry tomatoes among individual plates.

    Top with the soba noodles and chicken.

    Serve with the vinaigrette.
