Soba noodles are a great alternative to the typical dinner because they are made out of buckwheat and are customarily enjoyed at room temperature. In this recipe, we gave it an added twist by serving it with sweet and savory chicken, and a green salad with tangy vinaigrette dressing. Since soba noodles cook fairly quickly, this hearty and flavorful dinner can be prepared under any time constraint. Want to add a little bit of spicy heat? Add a sliced jalapeño to the tangy vinaigrette. It adds a great balance to the sweetness of the pineapple and brown sugar. Enjoy! MORE + LESS -
