I love gyros! I'll eat them whether they're made with chicken, beef or lamb. The last time I prepared gyros I made them with shrimp and now they're my favorite version. What I love the most is how easy they are to prepare. You can have lunch ready in just a few minutes. Give them a try!

Ingredients

  • 1 tablespoon of olive oil
  • 10 fresh shrimp, pealed, washed and deveined
  • Salt and pepper to taste
  • 2 pita breads
  • 1 cup of mixed lettuce
  • 1/2 cup of red onion, thin strips
  • 1/2 cup of Greek yogurt sauce (tzatziki)

Directions

    Heat the oil in a medium saucepan over medium heat. Add the shrimp. Season with salt and pepper to taste. Cook for 2-3 minutes on each side or until they turn pink. Set aside.

    Heat the two pieces of pita bread in the microwave for 30 seconds.

    Place one layer of lettuce and onion over one half of each piece of bread. Then add the shrimp and yogurt sauce. Fold and serve immediately.

    You can add pieces of feta cheese and black olives.
