This potato salad with shrimp is a variation on the well-known Russian Salad. Potato salads with vegetables and mayonnaise are very popular in many Latin American countries. On this occasion, I have added shrimp to my traditional potato salad recipe and it turned out riquísima! I love to prepare and eat salads. During summer, my favorite salads are those that have protein so I can enjoy them as a main course or serve them to my friends and family in barbeques and picnics. The best part of this potato and shrimp salad is that it’s simple and easy to prepare. If you have all the ingredients in the fridge, this meal can be made quickly and it’s a complete lunch.

Ingredients

  • 2 lbs cooked potatoes, cut into cubes
  • 1 lb cooked and peeled shrimp
  • 2 cups cooked carrots, cut into cubes
  • 1 cup cooked peas
  • 1/2 cup red bell pepper, diced
  • 1 tablespoon lemon juice
  • 4 tablespoons mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons white onion, finely diced
  • 3 tablespoons parsley, finely chopped
  • 3 tablespoons cilantro, finely chopped

Directions

    Mix the potatoes with the rest of the ingredients and stir carefully with a spatula.

    Season with salt and pepper.

Expert Tips

    To prevent the peas from losing their color during the cooking process, add a little salt and a bit of sugar to the water. The pot should also be kept closed while cooking.
