Shrimp Pancakes with Green Onions

These shrimp pancakes with onions are perfect for your leftover shrimp, since you don’t need many to give it a delicious taste. The onions make them slightly sweet. On a side note, these onions are known by various names depending on where you live, in English they’re called green onions or chives but both refer to the thin onions with the long green stems. These pancakes are ready in just a half an hour and are perfect for lunch or an appetizer.

Ingredients

  • 1 cup of flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup cold water
  • 10 onions, washed
  • 15 cooked shrimp, peeled and deveined
  • 3 tablespoons butter, divided

Directions

    Stir the flour, salt and baking powder together. Add water and mix until all the lumps disappear and form a slightly thick and smooth dough. Set aside.

    Cut the ends of the onions. Slice them in half lengthwise and then 3 inches in length.

    Combine the chopped onions and whole shrimp with the flour and water mixture. Stir well.

    Heat a frying pan about 8 inches in diameter over medium high heat. Add half a tablespoon of butter. Move the pan so the butter covers the whole bottom.

    Empty one-third of the mixture and scatter a wooden spoon to cover the entire surface of the pan. The pancake will brown in 1 1/2 to 2 minutes, depending on your pan and the temperature, flip it quickly. Cut the other half of the tablespoon of butter and use it to for the edges of the pancake.

    When the pancake is brown on both sides, remove it from the pan and place it on a paper towel to absorb any extra oil.

    Repeat with the three pancakes until finished.

    With a pizza cutter cut each pancake into 8 slices and serve with your favorite sauce.
