Shrimp Avocado Omelet

I believe that everybody needs a place to go to be alone sometimes and gather ones thoughts. To some that place might be the gym, the mall, or the park. For me, not surprisingly, small restaurants are it. Recently I went to this little café near my house in downtown Los Angeles. It turned out to be an excellent place to decompress and read a book as I had breakfast. Last week I was there and was in the mood for an omelet. They had one called the shrimp avocado omelet. Sounds interesting right? Well it was! The texture of the shrimp was tender and the egg was fluffy, while the creamy avocado played a nice role for the other two. As soon as I got home, I tried to recreate this gorgeous dish and here is my rendition. Enjoy!

Ingredients

  • 1 tablespoon butter
  • 6 large raw shrimp (peeled, deveined, and cut into 1/2 inch chunks)
  • 1/2 avocado (pitted and cut into 1/2 inch chunks)
  • 3 eggs
  • Salt and pepper, to taste

Directions

    In a large frying pan over a medium flame add in butter. Allow it to melt and get hot.

    Drop shrimp chunks into hot butter and cook until slightly pink.
  • 3
    Add in the avocado and cook for another minute.
  • 4
    In a bowl, crack the eggs then scramble them.
  • 5
    Pour whisked eggs over shrimp and avocado chunks.
  • 6
    Cook on each side for 3 minutes.

    Serve hot. Enjoy!
