Breakfast is my favorite meal. I can't start my day without it. Considering I've gone hours without eating, it's something that I really enjoy. This plantain omelet is great for breakfast. You can, however, enjoy it just as much for lunch or dinner. It's delicious and easy to make. It's the perfect mix of flavors and textures to change up your routine. You can also use this recipe as a party appetizer. Cut it into small squares and decorate them with different ingredients like olives or roasted peppers.

Ingredients

  • 2 ripe plantains, cut into slices
  • 1/3 cup oil for frying
  • 10 eggs
  • 2 tablespoons finely chopped onion
  • 4 tablespoons finely chopped cilantro
  • 1/2 cup ham, cut into small cubes
  • 3/4 cup grated mozzarella cheese
  • Salt and pepper to taste

Directions

    In a pan, fry the plantain slices in hot oil and drain them on paper towels.

    Mix the eggs with the onion, salt, and pepper.
  • 3
    Lightly grease a nonstick pan and pour three tablespoons of the egg mix. Place some of the plantain slices on top, some ham and cheese, and finally, pour a little more of the egg mix.

    Continue in the same order until you've used up all of the ingredients.

    Cook over medium heat, with the pan covered, for about 12 minutes. Turn the omelet over, remove from heat, and allow to cool.

    Cut the omelet into triangles, and sprinkle some cilantro on top.

    The omelet can be eaten cold or hot. You can substitute the ham for chorizo.
