When I was a little girl, my auntie Minnie used to make creamy guacamole. She would veer away from the traditional guacamole and head toward a fluffy guacamole that seemed so light it could float away. I use to dip my taquitos into her guacamole and think it was the best thing that ever passed my lips. It made me feel like I was floating on a cloud or like a little fairy that could whisper to the avocado trees and they would produce the creamiest avocado ever. Yes, her guacamole was pure magic! As I got older, I have always held a special place in my heart for my auntie Minnie’s creamy guacamole. Once I hit the age of cooking and making my own food, I asked her what the secret was to the fluffy guacamole that I could never recreate. She looked at me as if everybody in the whole world was in on the secret and said: “yogurt.” Yogurt? Who would have thought? I certainly wouldn’t have. Then she told me to add plenty of green onions and a splash of lime to brighten the taste. I took her words and have lived by them every time I want a creamy guacamole. Enjoy! MORE + LESS -
