Endives with Shrimp Salad

Endives are a white leafy vegetable that you can eat raw or cooked. I prefer it raw in a salad. Another way that I like to serve it is as an appetizer: each leaf stuffed with tuna salad, chicken salad, fruits or shrimp. It’s also great for parties with a little hummus or guacamole. Today’s recipe is an endive with shrimp salad. Try it out!

Ingredients

  • 1 lb cooked shrimp, finely chopped
  • 1/2 cup celery, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons red onion, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • 24 endive leaves (3 heads)
  • Fresh chopped cilantro, to taste, to garnish

Directions

  • 1
    In a bowl, combine all ingredients except endive leaves.
  • 2
    To serve, add 1 tablespoon of the shrimp salad to each endive leaf, top with chopped cilantro.

    Serve and enjoy!
