Bacon Wrapped Taquitos

A great food trend that is popular right now is wrapping our favorite foods in bacon! I believe the saying goes: “Everything’s better with bacon”. In this recipe, I am taking the popular Mexican taquitos and wrapping them in smoky, salty bacon.

Ingredients

  • 2 tablespoons olive oil
  • 1 large orange bell pepper, sliced into thin strips
  • 1 medium sweet onion, peeled and sliced into thin strips
  • 2 jalapeños, seeded and sliced into thin strips
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • 12 corn tortillas
  • 10 ozs queso fresco or panela, sliced into 18 equal strips to fit the length of tortilla
  • 18 strips of center cut bacon
  • 1/4 cup canola oil
  • 1 1/2 cups of your favorite salsa, for garnish
  • 1 large avocado sliced into wedges

Directions

    Add 2 tablespoons of olive oil to a large pan and heat to medium heat. Add the onions, bell pepper and jalapeños. Season with 1/2 teaspoon oregano, 1/2 teaspoon salt and 1/3 teaspoon pepper. Cook for 6 to 8 minutes or until the vegetables become soft. Remove from heat and let cool for 10 minutes.

    Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.

    Take 9 tortillas and wrap them in paper towels and transfer them to a plate. Warm them in the microwave for 40 to 50 seconds. Repeat with the remaining tortillas.

    Now the tortillas will be hot, but you must roll the taquitos while the tortillas are warm and more flexible. Add a strip of cheese and some of the pepper/onion mix down the center of warm tortilla. Fold it over, tuck in the edge and roll it as tight as you can. Wrap a piece of bacon around the center of taquito and transfer them to the lined baking sheet.

    Brush the tops of taquitos with canola oil and bake in preheated oven for 15 minutes. Remove from oven and brush them one more time with oil. Bake for another 15 minutes or until the tortillas become crispy and browned.

    Remove from oven and let stand for 5 minutes before serving. Garnish with your favorite salsa recipe and avocado slices.

    Taquitos are a great make-ahead dish. You can prepare them the day before and reheat them in the oven the next day. Cut them in half and they become a great bite size appetizer for a party.
