I grew up on the sweet goodness of platanitos fritos. They make any meal feel like a little slice of my Cuban family. But wrapping plantains in bacon just takes the traditional side dish to a whole new level! Whether for a party or nice dinner date, make bacon wrapped plantains! Ingredients

  • 2 yellow plantains
  • 1 lb bacon, thick cut
  • Vegetable or canola oil
  • Toothpicks

Directions

    Peel and cut plantains in a bias, as if you were making platanitos fritos.

    Coat a medium saucepan with roughly one inch of oil. Heat oil on medium heat.

    Using a slice of bacon, completely wrap a piece of plantain. Make sure to overlap the bacon slightly, so to keep the wrap together while cooking. Place a toothpick through the bacon wrapping and plantain to ensure it stays together while frying.

    Fry the bacon-wrapped plantains evenly on all sides until browned.

    Remove from heat and allow cooling slightly before serving.
