Surprise the family with homemade mini icebox cakes for the ultimate after-dinner dessert. A quick trip to the grocery store for yogurt and you're all set! Assemble these in the morning and they will be ready by dinner time.

Ingredients

  • 1 cup crushed Graham crackers
  • 4 Yoplait® French vanilla yogurt
  • 2 cups vanilla ice cream, softened
  • 1 cup sliced strawberries
  • Extra strawberries to garnish

Directions

    Add 1/4 cup crushed crackers to the bottom of 4 ramekins. Set aside.

    In a bowl, mix together the yogurts and ice cream. Divide this mix in half and place one half in the fridge while you assemble the first layer. Evenly divide the first half of the yogurt-ice cream mixture between the 4 ramekins. Evenly divide the sliced strawberries between the 4 ramekins.

    Retrieve second half of yogurt-ice cream mixture and evenly divide between the 4 ramekins. Place in freezer for 2-3 hours or until firm.

    When ready to serve, run ramekin under warm water to release. Serve garnished with strawberries.
