Ingredients

Waffles

  • 2 eggs or 4 egg whites
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 cups buttermilk
  • 1 tablespoon sugar
  • 3 tablespoons canola oil
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup low-fat granola

Drizzle

  • 1/2 cup honey
  • 1/4 cup creamy peanut butter

Directions

    Heat waffle iron; brush with canola oil if necessary (or spray with cooking spray before heating). In medium bowl, beat eggs with fork or wire whisk until foamy. Beat in remaining waffle ingredients except granola just until smooth.

    Pour about 1 cup batter from cup or pitcher onto center of hot waffle iron. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle iron.

    Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter.

    Meanwhile, in small microwavable bowl, mix honey and peanut butter. Microwave uncovered on High 40 to 60 seconds or until warm; stir until smooth. Drizzle over waffles. Sprinkle with granola.
