Ingredients

To prepare the caramel

  • 1 cup sugar
  • 2 tablespoons water

To prepare the flan

  • 6 eggs
  • 2 cans condensed milk
  • 2 cups milk (whole) or 1 1/2 cans evaporated milk
  • 1 lb cream cheese at room temperature
  • 1 tablespoon vanilla extract
  • 1/2 cup sugar
  • Candied fruit in bits (optional)

Directions

    To prepare the caramel: Heat the sugar in a pot with 2 tablespoons of water. When the mix begins to turn golden-brown, stir to ensure the sugar is evenly melted and syrup. Remove from heat and pour into a flan mold or a bundt cake pan.

    To prepare the flan: Heat the oven to 350°F.

    In the blender, blend together the eggs, condensed milk, whole milk, cream cheese, vanilla and sugar. Add the candied fruit or whichever ingredient you choose to add for garnish. Pour the mix into the flan mold.

    Place in the oven in a double boiler and bake for approximately 1 hour.

    Once cooked, let cool in the refrigerator for 2-3 hours or leave overnight.

    Once cold, place a large plate over the mold, and carefully flip the flan over. Slowly lift up the mold so the flan is "upside down." You will see the caramel and garnish covering the dessert.

    Serve, and enjoy!

    To check if the flan is ready before removing from the oven, insert a knife, and if it comes out clean that means the dessert is ready.
