European immigrants brought these stuffed breads with delicious toppings to Texas. Here they’ve adopted a delicious touch of Tex-Mex, the most popular option being the breakfast sausage with cheddar cheese and jalapeño. Make them at home and eat them warm.

Ingredients

  • 1 package active dry yeast
  • 1/4 cup warm water
  • 1 cup warm milk
  • 4 tablespoons of warm and melted butter
  • 2 eggs
  • 1/2 cup of sugar
  • 1 teaspoon of salt
  • 4 1/2 - 5 cups of flour
  • 1 cup of shredded cheddar
  • 1 jalapeño cut into slices
  • Breakfast sausage
  • Strawberry or peach jam

Directions

    Place the warm water in a large bowl, sprinkle the yeast and let sit for 5 minutes. You’ll see bubbles begin to form, a signal that the yeast is alive.

    Add the warm milk, butter, eggs and salt, and mix with a fork. Add 2 cups of flour and mix.

    Now use a wooden spoon or your hands to knead, add 2-1/2 cups of flour and knead until achieving soft and sticky dough, then 1/2 cup more of flour if necessary.

    Cover and let sit for 1-2 hours in a warm place until the dough has doubled in size.

    Flatten with your knuckles and refrigerate the dough for 4 hours or all night.

    Divide the dough in 2.5-ounce portions or 20 equal-sized portions. Place on a floured baking dish. Cover and allow to expand for 15 minutes.

    One by one flatten each ball and place half a breakfast sausage in the middle of each with cheddar and a slice of jalapeño. Close the middle first and then the borders and place on a baking dish covered in parchment paper with the seam facing down.

    Repeat with 10 kolaches. Shape the other 10 and fill with jam.

    Let sit for 20 minutes.

    Preheat the over to 375°F.

    Bake for 25 minutes or until golden brown.

    Serve warm.
