Spinach tortillas are a wonderful way to sneak in those extra veggies into your child’s diet. Packed with two cups of spinach, these tortillas are a great addition to the dinner table. Serve them with warm shredded chicken for taco night or pile them high with cheese for delicious quesadillas.

Ingredients

  • 2 cups fresh spinach
  • 1 cup water
  • 1 teaspoon ground cumin
  • 2 cups corn flour for tortillas
  • 1/4 tablespoon of salt

Directions

    To a blender add fresh spinach, water and ground cumin; blend until smooth.

    In a bowl, combine corn flour, salt and spinach water.

    Knead to form a smooth dough.

    Divide dough into 16 portions and roll into smooth balls.

    Place one at a time onto a tortilla press lined with plastic film or plastic bag, press firmly.

    Cook on a preheated comal or grill for two minutes on each side. Serve warm.

    Swap out ground cumin for oregano for another tasty spin.

    You can also use frozen spinach, thaw completely and strain before using.
