Romaine Salad with Salmon

The year has just begun and it is a great time to think about dieting. But there's no need to give up on delicious meals. One great dish for this is a grilled salmon with a side of salad with almonds and dried cranberries. The sacrifice is definitely worth it!

Ingredients

For the Salmon:

  • 1 1/2 lbs skinless salmon filet
  • 1 teaspoon lemon pepper
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Salad:

  • 1/2 cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of brown sugar
  • Salt and pepper to taste
  • 1 romaine lettuce
  • 1/4 cup of sliced almonds
  • 1/4 cup of dried cranberries

Directions

    For the salmon: Preheat the grill or griddle to medium heat. Season the salmon with the lemon pepper, garlic powder, and salt/pepper.

    Lightly sprinkle the grill with canola oil spray or butter. Place the salmon on the grill and cook for 6-8 minutes on each side or until the fish falls apart easily with a fork.

    For the salad: In the meantime, mix or blend the ingredients to make the dressing: olive oil, balsamic vinegar, Dijon mustard, brown sugar, salt and pepper.

    Wash and drain the lettuce well. Cut and add the almonds and cranberries. Serve on separate dishes and add dressing to taste. Serve with salmon.
