Pasta salads are a great option when you need a quick dinner or lunch because there are so many varieties. Last week I prepared an orzo and chicken salad with cranberries and almonds. This recipe is incredibly delicious and very easy to prepare. What I like most is the perfect balance of sweet and savory. MORE + LESS -

Ingredients

cups cooked and shredded chicken (about 4 breasts)

cups orzo, cooked according to package directions

cup dried cranberries

cup sliced almonds, toasted

cup mayonnaise

tablespoons heavy cream

teaspoon ground cumin

tablespoons freshly squeezed lemon juice

tablespoons chopped flat-leaf parsley
2
tablespoons chopped fresh cilantro
Salt and pepper to taste

    Place the chicken, orzo, cranberries, almonds, mayo, cream, cumin, lemon juice, parsley, cilantro and pepper in a medium bowl. Stir with a fork until well combined.

  • This salad can be kept in a sealed container for up to 2 days.
  • You can add fresh arugula to give your salad more color and flavor.
