Roasted Mushroom Pizza

A quick appetizer perfect for a girl's night in or served alongside a salad for dinner; this roasted mushroom pizza is a people-pleaser. Succulent mushrooms are tossed with olive oil, spices and then roasted to be then placed on a crispy pizza crust with a sprinkle of cheese. This pizza can be made faster than calling in for delivery!

Ingredients

  • 1 lb Baby Bella mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon salt
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 1 1/2 cups shredded Oaxaca cheese, Monterrey jack or provolone

Directions

    Pre-heat oven to 450 °F.

    Place sliced mushrooms on baking sheet and toss with olive oil, sprinkle with spices and toss to coat evenly. Roast mushroom for 15-20 minutes, turning once.

    Remove from oven, place mushrooms in bowl and, in same pan, roll out dough.

    Return to oven and bake pizza dough 10 minutes until lightly golden.

    Top with roasted mushrooms, shredded cheese and return to oven once more to melt cheese. Slice and serve warm.

  • While roasting your mushrooms feel free to toss in a few peppers, onions, or potatoes to add to your pizza.
