Flan and rice pudding! Two Latin classics brought together in one dish. This was my first time preparing this dessert and truthfully, I was surprised at just how rico it turned out. I almost didn’t have time to take pictures of this delicacy before my family got their hands on it. Rice pudding flan is both different and sabroso; a perfect dessert for holiday celebrations with friends and family. Enjoy!

Ingredients

To prepare the rice pudding:

  • 1 cup rice
  • 2 cups water
  • 1 cup sugar
  • 1 cinnamon stick
  • 2 allspice berries
  • 4 cloves
  • 1 star anise
  • 4 cups milk

To prepare the flan:

  • 1 1/2 cups sugar
  • 6 eggs
  • 1 14-oz can condensed milk
  • 14 oz milk
  • 1 teaspoon vanilla extract

    To prepare the rice pudding, pour the rice and water in a medium-sized pot. Cover, and let cook over medium heat until the water has evaporated and the rice is al dente, about 8 minutes.

    Reduce heat and add the sugar, all spices and peppers, and 1 cup of milk. Cook slowly, stirring constantly, until the rice has absorbed all the liquid.

    Add 1 additional cup of milk, and cook until all milk has been absorbed and the rice is tender and creamy, repeating the last step, approximately 25 minutes. Remove from heat and let cool. Remove and discard the spices and peppers.

    To prepare the flan, add sugar to a medium-sized pot and stir continuously until all the sugar has dissolved and is amber in color, forming a caramel, over medium heat.

    Carefully divide the caramel between the two flaneras (molds used to make flan), distributing it so that it covers the bottom and sides of the molds. Let cool completely.

    For the flan, put all flan ingredients in a blender and blend together until fully incorporated.

    In a large bowl, mix the (cold) rice pudding and the flan mix. Divide the new mix between the 2 flan molds and cook for 1 hour in a bain Marie.

    Let cool before removing the flan from the mold.

    To save time, prepare the rice pudding beforehand and store in the refrigerator until you’re ready to make the flan.
