Potato Pancakes

One of my favorite things after a big party or celebration is the leftovers. Most of the time, we simply heat them up and eat the same dish again, but sometimes we like to get creative. When it comes to mashed potatoes, we always prepare a lot because there are always leftovers. Mashed potatoes taste delicious the day they're made, but usually feel a little dry the next day. One delicious way to reuse them is in potato pancakes. This dish can be prepared in half an hour and is very inexpensive.

Ingredients

  • 3 cups cold mashed potatoes
  • 1 cup cheddar cheese
  • Finely chopped 2 scallions (both white and green parts)
  • 4 slices of ham finely chopped
  • 2 eggs
  • 5 tablespoons Gold Medal™ all-purpose flour
  • Bread crumbs
  • Oil for frying

Directions

    Mix the mashed potatoes, cheddar cheese, onions, ham, eggs and flour until everything is very well combined. The consistency should be firm but gentle, if your mashed potato is a little soft, perhaps you need more flour. If it is very dry, then you need a little less. I suggest you start with 4 tablespoons and you go changing it depending on how you see the potatoes.

    Place breadcrumbs in an extended plate, set aside.

    Heat a saucepan and add 3-4 tablespoons of oil.

    Use your hands to make balls with the mashed potatoes, then carefully squeeze them between your hands to form a pancake about 2 inches in diameter. Cover in the crumbs and carefully place in the pan. Repeat until you have placed 4-5 pancakes to fry, depending on the size of your pan.

    Cook for about two minutes per side or until golden. Take out of the oil and place on a plate lined with paper towels. Repeat until you're done with all of the pancakes. Serve immediately.

    We accompany the pancakes with fresh cream sauce.

    If you prefer a vegetarian option, omit the ham and add an herb like parsley or cilantro.

    If you want to give it a spicy touch, add jalapeño to the mixture.
