Pancake Fried Bacon

When the warmer months arrive, I look forward to fairs and carnival food. I can almost smell the popcorn, cotton candy and all the delicious treats you can think of. The food gets more and more tempting every year I go back, from fried cookies to fried ice cream to fried butter! One of my favorites is the pancake fried bacon. How can one resist this all-in-one breakfast treat? Since the warm weather is still a few weeks away, I decided to play in my kitchen and come up with my own version of pancake fried bacon for a preview of what’s to come this summer.

Ingredients

  • 1 lb maple bacon
  • 10 ozs Bisquick™ Shake 'n Pour™ pancake mix
  • 1 1/2 cups water
  • 1/2 cup maple syrup
  • Canola oil for frying

Directions

    Cook bacon on a skillet until crisp and drain on a plate lined with paper towels.

    In a separate skillet, heat oil over medium heat.

    Add water to Bisquick Shake ‘N Pour Pancake Mix container. Shake until well mixed. Pour into a mixing bowl.

    Dip fried bacon into pancake mix. Fry in oil until bottom is golden brown and then flip with spatula to cook other side.

    Place on a plate lined with paper towels to cool.

    You can top with powdered sugar and serve with jelly instead of syrup.
