Fall is my favorite season. The leaves begin to change color, the weather cools down and I begin to crave comforting seasonal meals made with ingredients like sweet potato. Sweet potatoes are general prepared as a dessert and the truth is that I love it! However, they can also be used in spicy and savory dishes. I love surprising my family and guests with savory sweet potato dishes like these roasted pork chops with sweet potato and chile ancho sauce. The taste of the sweet potato combined with the spicy chile ancho and salty pork chops creates an explosions of flavors that everyone loves.

Ingredients

  • 3 dried ancho peppers, stemmed
  • 2 dried guajillo peppers, without stems and seeds
  • 2 cloves of garlic
  • 3 cups water
  • 2- 1/2 lbs. pork chops
  • Ground cumin
  • 1 medium white onion, cut into large chunks
  • 3-4 medium, washed and cut sweet potatoes into large chunks

Directions

    Boil the dried ancho and guajillo peppers with the 3 cups of water. Remove from the heat and let sit until they're completely soft. Blend the peppers with the water they cooked in along with the garlic and process until completely ground.

    Preheat the oven to 350°F. Cover a container or mold with a generous amount of cooking spray.

    Season the pork chops with salt, black pepper and ground cumin to taste. Place the pork chops in the container with the cooking spray. Place pieces of the onion and sweet potato on top and add the pepper purée.

    Cover the container with aluminum oil and back for 60-90 minutes or until the pork chops are completely cooked. Serve with green salad and garlic bread. Enjoy!
