A stir fry is a great option for weeknight dinners. This recipe can be done in under 30 minutes and it's packed with exciting and bright flavors. I suggest you make a citrus sauce that will go well with the beef and add all natural flavors. Orange is a great option because its juice can be used for the sauce, the orange segments can add texture to the stir fry and its zest goes wonderfully as a final touch of flavor and garnish. Ingredients

cup orange juice

tablespoon grated orange zest

tablespoons soy sauce

tablespoon cornstarch

lb boneless beef sirloin steak, cut into thin strips

tablespoons olive oil

cloves garlic, chopped

cup baby corn, cut in half
1
cup red bell pepper, julienned
1/2
cup green onions
3
cups orange segments, cut in half
Extra grated orange zest for garnishing

    In a small bowl, combine the first four ingredients until smooth; set aside.

    In a large skillet, stir-fry beef in 1 tablespoon of olive oil for 6-8 minutes or until the beef is no longer pink. Remove from skillet and keep warm.

    Stir-fry baby corn, pepper and green onions with garlic and remaining oil for 3 minutes.

    Stir orange juice mixture and add to the pan.

    Bring to a boil; cook and stir for 2 minutes or until thickened.

    Add beef and orange segments and stir them 1 more minute until they heat through.

    Garnish with extra orange zest and serve.
