Mojo de Ajo Shrimp

In my early teen years, my favorite dishes where those with seafood. I was very lucky to have a best friend whose family owned an outstanding Mexican seafood joint close to my house. I obviously had dinner there twice a week! My favored dish was their mojo de ajo, which is basically butter and garlic sauté over shrimp. I now make my own mojo de ajo shrimp and love to delight with its beautifulness during the warm months of the year. Take a gander at my recipe and let me know what you think!

Ingredients

  • 1 lb jumbo shrimp, shelled and deveined
  • 4 tablespoons butter (half a stick)
  • 3 tablespoons minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup white wine
  • 1 teaspoon finely chopped parsley
  • 1 tablespoon fresh lemon juice
  • Black pepper, to taste

Directions

  • 1
    On a grill sprayed with a non-stick oil over a medium-high flame, cook shrimp on each side for about 1 minute (just long enough to sear the outside).

    In a large frying pan over a medium high flame, add in butter and allow it to melt.

    Add in garlic and red pepper flakes. Mix to combine and sauté for about 3 minutes.

    Pour in white wine and parsley, and allow wine to evaporate a little. Cook for about 10 minutes.

    Add in slightly seared shrimp, and cook for an additional 3 minutes.
  • 6
    Add in fresh lemon juice and sprinkle with black pepper. Serve and enjoy!
