Ingredients

  • 1 lb uncooked spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 1 white onion, finely chopped
  • 1 lb uncooked large (21 to 30 count) shrimp, peeled, deveined, tail shells removed
  • 2 tablespoons from 1 can (6 oz) Muir Glen™ Organic Tomato Paste
  • 1/4 cup white wine
  • 2 cups heavy whipping cream
  • Salt, as desired
  • 2 teaspoons chopped fresh parsley

Directions

    Cook the pasta in boiling water for approximately 8 minutes, stirring occasionally.

    Meanwhile, in a large skillet, heat oil over medium-high heat. Add garlic and onion; cook and stir until the onion is translucent. Add the shrimp and sauté until shrimp are pink. Add tomato paste and cook for 1 additional minute. Add the wine and let reduce. Pour in the cream and cook over medium heat for 8 more minutes. Season to taste.

    Mix the pasta with the sauce, sprinkle with the chopped parsley and serve.
