Father's Day is a very special celebration. Unfortunately, I did not meet my dad but I had many uncles who loved me as if I was their daughter. Throughout my life, I have had the pleasure of meeting men who are model fathers; but my husband, Juan Ernesto, is number one on my list. That is why today I want to spoil him. Juan Ernesto loves pasta; he is from Cuba, but he says he was Italian in another life. A delightful Mexican-style pasta marinara is easy to prepare, very tasty and your kids can help you prepare it! Ingredients

box (230 grams) of brown rice pasta (noodles or spaghetti)
2
cans of organic roasted tomatoes cut in dices (14.5 oz each can)

garlic cloves, finely minced

jalapeño, finely sliced

teaspoons of olive oil
1
cup of creamy goat cheese
1
Hass avocado, sliced
Cilantro for garnish

cube or bag of chicken bouillon
1
teaspoon of coarse salt
4
cups of water
Salt and pepper

    Turn on the stove and place a large skillet. Add the olive oil and sauté the garlic; then, add the jalapeño, the tomatoes and season with chicken bouillon, salt and pepper. Cook for 15 minutes.

    Pour 4 cups of water in a pasta pot, add coarse salt and wait until it boils. Add the pasta and cook it until al dente.

    Using a strainer, drain the pasta and cool it off with water at room temperature. Place a pasta serving in a bowl and add the hot tomato sauce.

    Cover with goat cheese; add avocado slices and cilantro for garnish.

Expert Tips

  • Brown rice pasta does not contain gluten and it is easy to digest. If you wish, you can replace the creamy goat cheese with cream cheese or white cheese.
