Orzo is a kind of Italian pasta made with semolina. It's similar to rice in size and shape. In restaurants across the U.S., it's often served cold or in soups. I like to use orzo in salads dressed with olive oil, vinegar and other Mediterranean ingredients like green olives and kalamatas, grilled peppers and feta cheese.

Ingredients

  • 2 cups cooked orzo pasta
  • 1/2 cup olive oil
  • 2 tablespoons vinegar
  • 1/4 cup sliced green olives stuffed with peppers and kalamatas
  • 1/4 cup red onion
  • Fresh parsley, chopped and to taste
  • 1 teaspoon dry oregano
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled

Directions

  • 1
    Put the cooked pasta in a container and dress with olive oil and vinegar. Mix and toss in the olives, onion and fresh parsley.

    Season with oregano, salt and pepper, to taste.

    Serve on top of a lettuce leaf and sprinkle with crumbled feta cheese.
