One very refreshing drink that I enjoy is made with mango juice, coconut water, lemon, sugar, mint and ice. Whenever I prepare cocktails for adults I always like to have an alternative option for the children and anyone that may not drink alco-hol. The mojito can be easily converted into a non-alcoholic beverage by simply omitting the rum. This mango and coconut mojito recipe is a delicious option for children or anyone that doesn’t drink alcohol.

Ingredients

  • 1 cup of mango puree
  • 1/4 cup of fresh lemon juice
  • 1/2 cup of sugar, or to taste
  • 1 (4 oz) package of fresh mint leaves
  • 2 cups of coconut water
  • 1 cup of sparkling water
  • Ice

Directions

    Pour the mango puree into a blender with the sugar and lemon juice, then blend until well combined.

    Pour the mixture into a pitcher, add the ice, mint leaves, coconut water and sparkling water, then stir.

    Taste and add more sparkling water or sugar if necessary. Serve.

    For a version with alcohol, just add rum. You can make the mojitos in a pitcher or in individual glasses.
