If you're looking for lunch to take to work, let me give you a recommendation. Besides salads and sandwiches, soups are another excellent option. All you need to buy is a couple of thermoses and that's where you'll store your soup. Lentils make a soup that is not only delicious, but will also leave you completely satisfied; it's so versatile that you can add practically anything. My Mexican family usually eats it with banana. If adding fruit isn't something you would like, try it with a bit of bacon. Better yet, add some jalapeños like in this recipe. It only takes 20 minutes and you’ll have lunch for a couple of days! • 1
Heat the olive oil in a deep pot. Add the pepper and fry, constantly moving for two minutes. Add the carrots and cook for 30 seconds, no more or it will burn.
  • 2
Pour in the crushed tomato and chicken broth, let boil. Add both cans of lentils, let boil at medium heat for 5 minutes.
  • 3
Serve with sour cream, if you like.

Expert Tips

  • Wash your hands right after chopping the jalapeños.
  • If you want to add more veggies to the soup, I recommend adding spinach.
