Breakfast is a very important meal to help start out the day with the energy to take on daily stresses. With a scheduled packed with activities and work, it’s always helpful to find breakfast ideas that are simple and filled with protein, fiber, and delicious flavor for adults and children. This is why I’m sharing with you a delicious recipe for pancakes made with Fiber One® Protein Cranberry Almond cereal. This option is simple and tasty, and it doesn’t hurt that Fiber One® Protein contains 10 grams of protein when served with milk and 20% of the recommended serving of daily fiber. Ingredients

cups of Bisquick™ Original baking mix
1
cup of almond milk
2
eggs
1/2
cup of Fiber One™ Protein Cranberry Almond cereal
1/2
teaspoon of cinnamon powder
2
tablespoons of canola oil or cooking spray

To Serve:

Maple syrup
1/2
cup of Fiber One™ Protein Cranberry Almond cereal, to sprinkle on pancakes

    Pour the pancake mix, milk, eggs, cereal and cinnamon in a large bowl. Mix using a whisk until all the ingredients are well combined.

    Pour a little bit of canola oil or cooking spray into a saucepan. Once the oil is hot, use a ladle (completely filled) to make the pancakes. The use of a ladle ensures that your pancakes will be the same size. Let cook and flip to cook on both sides. Repeat until you’ve used up all the mix.

    Serve immediately; sprinkle with Fiber One Protein cereal and pour a little bit of maple syrup. You can add butter if you like.

Expert Tips

  • You can use just the egg whites instead of the whole egg and coconut milk or cow milk instead of almond milk.
  • If you want to prepare extra pancakes to freeze them, all you have to do is wrap each pancake in wax paper and place it inside of a vacuum sealed container.
