Feijoa Ice Cream

The feijoa is another fruit that has recently become popular in the U.S. I recommend looking for the frozen pulp or the juice in your supermarket. If you can find the fresh fruit you can use that too.

Ingredients

  • 3 cups of Yoplait® Greek plain yogurt
  • 1/3 cup of feijoa pulp or juice
  • 2/3 cup of sugar
  • 1 tablespoon of honey or agave
  • Pinch of salt

Directions

  • 1
    Place all your ingredients in the blender and process until everything is well combined and the sugar has dissolved.

    Refrigerate all night.

    The next day place all the ingredients in the ice cream maker and follow the instructions. Or pour the mixture into an 8x8” pan and freeze. Remove every 30 minutes and stir with a fork, repeat until it has the texture of ice cream. Do this 4-6 times.

    If you can’t find feijoa, you can use guava or mango juice.

    If you use frozen pulp, let thaw first.

    You can also make popsicles.
