Farfalle and Vegetable Scampi

Shrimp is one of my favorite ingredients to cook. There are so many delicious ways to prepare them and they're so versatile. Italian cuisine has a type of pasta they call scampi that's cooked with shrimp, white whine garlic sauce and usually comes with a side of seasonal vegetable. The word "scampi" means prawn in Italian and it is a very popular dish in Italian American restaurants. Today I share with you my scampi recipe. Enjoy!

Ingredients

  • 1 lb fresh, clean and deveined shrimp
  • 2 tablespoons of olive oil
  • 4 garlic clove finely chopped
  • 1/2 cup of white wine
  • 1/3 cup of Italian parsley, chopped
  • 4 cups of farfalle pasta, cooked
  • 1 package frozen basil vegetable medley
  • Salt and pepper to taste

Directions

  • 1
    Place a pot on the stove and add the olive oil and garlic, saute for a few minutes and then add the shrimp. Fry until they turn pink.

    Add the frozen vegetable and the wine. Season with salt and pepper and then cover.

    Let the ingredients cook and add the parsley and pasta when it's ready. Mix and serve immediately.

    You can use any vegetables you like.

    If you prefer, you can use spaghetti or angel hair pasta instead of farfalle.
