Cranberry, Orange and Goat Cheese Seasonal Salad

My family loves salads, this is why I'm always looking for new way to combine ingredients and give them a little variety. This salad is a great way to start the new year because it's filled with contrasting flavors and uses easy to find seasonal products. I hope you like it.

Ingredients

Salad

  • Lettuce of choice (I used romaine lettuce with a handful of spinach)
  • 1 package (12 oz) cranberries
  • 2 teaspoons olive oil
  • 2 oranges, cut into slices
  • 4 oz goat cheese
  • 1/2 tablespoon honey

Vinaigrette

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or red wine vinegar
  • Orange juice, to taste
  • Salt and pepper, to taste

Directions

    Preheat the oven to 275°F.
  • 2
    Mix the cranberries with 2 teaspoons of oil and place them in a baking dish. Bake for 30 minutes.

    Wash, dry and cut the lettuce if necessary. Cut the oranges into slices in a container (to save the juice).

    Mix the goat cheese and honey in a separate container.
  • 5
    Once the cranberries are baked and cooled, add them to the salad.
  • 6
    Serve the dressing in a separate container or mix it in just before serving. Enjoy!
