Coleslaw and Fruit Salad

I've had a passion for cooking since I was a little girl. I remember asking my parents to get me a play kitchenette with plastic pots and plates for Christmas. I enjoyed watching my mom cook and I always tried to imitate her. Today, I enjoy my kitchen to the max and try to keep the aromas and flavors I learned at home in my recipes. During the holiday season, I enjoy wrapping gifts, decorating my house and preparing traditional dishes of the season to spice up my table and please my family. My Christmas menu always includes delicious and refreshing coleslaw with fruit. It's very easy and inexpensive!

Ingredients

  • 5 cups white cabbage, chopped into thin strips
  • 3.5 ozs candied fruit: maraschino cherries (red and green), pineapple and raisins
  • 1 cup mayonnaise
  • 1/2 medium red pepper, chopped into small squares
  • 1/2 medium green pepper, chopped into small squares
  • 1/4 cup parsley sprigs
  • Salt and white pepper to taste

Directions

  • 1
    Chop the cabbage into quarters, and quarter into thin strips. Place the cabbage in a colander, wash well and drain it. Dry it with a paper towel.

    Chop candied fruits and reserve some whole cherries for garnish.

    In a bowl, preferably plastic, begin to mix the ingredients. Place the cabbage and add mayonnaise in soft enveloping motions, and then add the candied fruits and paprika. Salt and pepper to taste.

    Place in the fridge for 10 minutes to cool and conserve, or until ready to serve.

    Garnish with parsley sprigs and whole cherries to serve.
